Berry Baked Oats

Change up your morning porridge with this delicious recipe for baked oats bursting with plump berries. It takes only minutes to mix together, then you can get on with your morning chores while it bakes in the oven. Serve with a dollop of yoghurt, or simply a drizzle of honey will do. This recipe is easily doubled or tripled to serve four or six.

Ingredients

  • 6 tbsp porridge oats
  • 1 tbsp seed mix
  • 1 large egg
  • 80ml milk
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • 50g blueberries
  • 50g raspberries

Instructions

  1. Pre-heat oven to 190°C / 170°C fan and grease two ramekins with melted butter or oil.
  2. In a bowl, mix together the oats and seeds, then add the wet ingredients and mix to combine.
  3. Fold in ¾ of the berries then spoon the mixture equally between the two greased ramekins.
  4. Press the remaining berries lightly into the top of the mixture, then place ramekins on a baking tray and bake until they’re set in the middle and a sharp knife comes out without any uncooked mixture on it, about 15 minutes.
  5. Leave to cool for about 5-10 minutes before enjoying while still warm, topped with a dollop of your favourite yoghurt or a drizzling of honey.
