Cheese & Chive Potato Wedges

What could be better than the humble potato wedge? Potato wedges covered in melted cheese, drizzled with sour cream and loaded with chives for a subtle onion flavour. And if you like a bit of zing, some hot sauce for good measure. A delicious side dish that’s simple to make. Recipe created by I Love Cooking for Kenwood.

Ingredients

  • 1 kg roasting potatoes, washed
  • 4 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp flaky salt
  • ½ tsp ground black pepper
  • 200g cheddar cheese
  • To serve:
  • ½ tub sour cream
  • ½ packet fresh chives, chopped
  • Hot sauce of choice, optional

Instructions

  1. Pre-heat the oven to 200°C / 180°C fan assisted.
  2. Cut potatoes into long wedges then rinse with water and pat dry with paper towel.
  3. Transfer potatoes to a large roasting dish.
  4. Drizzle over the oil and sprinkle with smoked paprika, salt and pepper. Toss well so that the potatoes are all evenly coated.
  5. Bake in the pre-heated oven, turning potatoes over halfway through cooking, until golden, 35-40 minutes.
  6. While potatoes are cooking, grate the cheese in your Kenwood food processor with the large grater attachment.
  7. Once potatoes are cooked, sprinkle cheese evenly over the top then return to the oven until melted and bubbling, about 5 minutes.
  8. To serve, spoon over sour cream, sprinkle generously with chopped chives, and add a drizzle of hot sauce.
