Chicken with 40 Cloves Of Garlic

Chicken with 40 Cloves Of Garlic – don’t be afraid of the amount of garlic in this dish, it mellows into a tender, sweet and supremely delicious roast chicken.

Ingredients

  • 1 lemon
  • 1 large chicken
  • 2 tbsp olive oil
  • Salt & pepper
  • 40 cloves garlic, skin on
  • 250ml chicken stock
  • 1 glass white wine
  • To serve: roast potatoes & asparagus

Instructions

  1. Preheat the oven to 200C/400F/gas mark 6.
  2. Cut the lemon in half and place in the cavity of chicken. Place the chicken in a casserole dish and rub with olive oil and season with salt and pepper. Add the garlic cloves, stock and win and bring to a boil. Cover with a lid and bake in the oven for 1 hour. Remove the lid and roast for 30 minutes, until the skin is golden brown.
  3. Remove the chicken to a warm plate, cover loosely with tin foil and leave to rest. Remove half the garlic cloves and set aside. Simmer the casserole dish for about five minutes, mashing the garlic to release it’s flavour. Strain into a sauce boat.
  4. Serve the chicken with the reserved garlic and drizzle with the sauce. Serve with crispy roast potatoes and asparagus.
