Creamy Tomato Penne Pasta

A great quick and easy recipe perfect for lunch or dinner.

 

 

 

Ingredients

  • 500g penne pasta
  • 1 tsp olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 1 tin cherry tomatoes
  • 1/2 tsp brown sugar
  • 1 tbsp lemon juice
  • 3 tbsp Mascarpone
  • Basil leaves
  • salt and pepper
  • Parmesan

Instructions

  1. Cook the pasta according to the packet instructions.
  2. In the meantime, gently fry the onion in a little olive oil for 2 minutes ensuring they don’t brown. Then, add garlic cook for a further 2 minutes.
  3. Add in the tin of tomatoes, brown sugar and lemon juice. Cook for 3 minutes. If some tomatoes are still whole, crush them slightly.
  4. Add the Mascarpone and stir through. Strain the pasta and toss through the tomato sauce.
  5. Season with salt and pepper. Divide into bowls and garnish with basil leaves and grated parmesan.
