Introduction
This crispy cheesy chicken is perfectly paired with roast tomatoes to offset it’s rich interior
Ingredients
- 2 tsp thyme, chopped
- 2 garlic cloves, crushed
- 1 ball mozzarella, chopped
- 3 tbsp parsley, chopped
- Salt & pepper
- 4 chicken breasts
- 50g fresh breadcrumbs
- 20g Parmesan, grated
- 100g plain flour
- 1 egg, beaten
- Spray oil
- 250g cherry tomatoes on the vine
Method
- 1. Preheat oven to 180°C/350°F/gas mark 4.
- 2. Combine thyme, garlic, Mozarella and 1 tbs parsley, and season.
- 3. Cut a deep pocket lengthways in the thickest part of each fillet and fill with the cheese mixture. Secure with toothpicks.
- 4. Combine breadcrumbs, parmesan and remaining parsley, then season. Place egg in a shallow bowl. Dip chicken first in flour, then in egg, then crumbs and place in a greased baking dish. Spritz the chicken with spray oil and bake for 45 minutes, until the chicken is just cooked.
- 5. Add tomatoes and bake for 5 minutes or until starting to soften and chicken is cooked.
- 6. Remove toothpicks, and serve!
