Fresh Courgette Salad with Lemon & Parmesan

This is a salad that doesn’t skimp on flavour and while you’re eating it you know it’s doing you good. It’s all about bringing great ingredients together. Recipe from ‘Paul Flynn’s Family Food’: Lidl stores nationwide €12.99

Ingredients

  • 2 courgettes (about 450g), very thinly sliced
  • 1 red chilli, deseeded and finely chopped
  • Juice of ½ a lemon
  • 8 – 10 tbsp Primadonna extra virgin olive oil, be generous
  • 90g Lovilio Parmigiano Reggiano, in shavings (you can use a vegetable peeler to do this)
  • Freshly cracked Kania salt and pepper

Instructions

  1. Jumble the sliced courgettes onto a large platter and scatter the chilli on top. Pour over the lemon juice, followed by the olive oil and the parmesan shavings.
  2. Season generously and serve.
  3. Tip: You can also serve this with Serrano ham draped over the salad
