Giant Chocolate Chip Cookie

Nessa Robins’ Giant Chocolate Chip Cookie– This gorgeous giant chocolate chip cookie ticks all the boxes. It only takes minutes to prepare and easily serves eight to ten people. For best results, you will need a cast-iron pan as it holds the heat allowing the cookie to crisp up perfectly, while it also keeps the cookie warm as you’re serving it up. I like to use a mixture of milk and dark chocolate chips, but you can use one or the other, or even chunks of chocolates in their place.

Ingredients

  • 175g Butter
  • 150g caster sugar
  • 115g light brown sugar
  • 1 free range egg
  • 1tsp vanilla extract
  • 260g self raising flour, sieved
  • 125g chocolate chips
  • Icing sugar, optional

Instructions

  1. Preheat the oven to 200°C/fan 180°C/gas 6. Prepare a 28cm cast-iron frying pan by lightly greasing it with a little butter.
  2. In a large mixing bowl, cream the butter and sugars together, until pale and creamy.
  3. Lightly whisk the egg in a cup and add the vanilla extract. Slowly add this to the mixing bowl, whisking all the time.
  4. Add the flour to the bowl and mix gently to combine, before adding the chocolate chips and mixing until evenly distributed.
  5. Transfer the dough to the prepared pan and press it out to an even layer.
  6. Bake in the preheated oven for 22-25 mins.
  7. Remove from the oven and dust over a little icing sugar before serving from the pan with a scoop of ice-cream.
