Guinness Beef Stew

A hearty Irish Guinness stew; perfect for a winters evening.

Ingredients

  • 1kg stewing beef
  • 2 onions, diced
  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 2 cloves garlic
  • 300ml beef stock
  • 100ml Guinness
  • Salt and black pepper
  • 50g butter
  • 100g mushrooms, if available, sliced
  • 500g potatoes, peeled and chopped (in big chunks)
  • Parsley & thyme

Instructions

  1. Preheat the oven to 180°C/350°F/gas mark 4. Heat the oil in a large pan, brown the meat well. Remove the meat to a casserole dish.
  2. Next sauté half an onion, carrots, celery, mushrooms in the butter. Add to the meat along with the garlic. Pour in the stock and Guinness.
  3. Peel and chop the potatoes in half and add to the casserole dish with two sprigs of thyme. Season with salt and pepper.
  4. Cook in the casserole dish for approx. 1 ½ – 2hours. You may need to add a little water if it has reduced down too much. Remove the thyme stalks. Sprinkle with parsley and serve.
