Ingredients
750g lamb steak, cubed
1 red pepper cut into chunks
1 green pepper cut into chunks
100g mushrooms
1 red onion, cut into wedges
Salt and freshly-ground black pepper
3 garlic cloves
2 tsp oregano
For the Marinade:
50ml Greek-style natural yoghurt
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp ground coriander
Grated rind and juice of 1 lemon
For The Mint and Garlic Yoghurt Dressing:
185ml Greek-style natural yoghurt
Half fresh cucumber diced
1 tbsp fresh coriander, chopped
1 tbsp fresh mint, chopped
Zest of 1 lemon
2 garlic cloves, crushed
Instructions
Mix all of the marinade ingredients in a casserole dish. Add the cubed lamb and coat it completely with marinade. Cover and leave in fridge for a few hours or ideally overnight.
Soak 8-10 wooden skewers in water in advance to prevent burning during cooking process or use metal skewers instead.
Thread the lamb cubes, peppers, mushrooms and red onion onto the skewers, brush with olive oil and season. Cook for 3-4 minutes on each side until lightly charred and cooked to your taste.
To make the Mint and Garlic Yoghurt Dressing, stir together all the ingredients and season to taste. Drizzle a little dressing over each lamb skewer and serve the rest on the side.
