Ingredients
2 racks of lamb
Salt & Pepper
4 tbsp pesto
30g dried breadcrumbs
1 tbsp Dijon mustard
Olive oil
To serve:
New potatoes
Griddled asparagus
Instructions
Preheat the oven to 200C/400F/gas mark 6. Halve lamb racks so you have four portions. Season the meat with salt and pepper. Combine the pesto and breadcrumbs in a bowl.
Spread the meat with mustard and then the pesto mixture, to form a crust on the meat. Place the racks on a roasting dish and drizzle with olive oil.
Roast for 20 minutes for medium meat, or 5 minutes longer for well done. Remove from the oven, cover loosely with foil and rest for 10 minutes before serving with new potatoes and asparagus.
