Impress your guests with this simple yet showstopping side dish. Carol’s Stockmarket Potato Boulangère.

Ingredients

  • 1Kg Maris Piper Potatoes, skin on finely sliced
  • 1/2 medium onion, peeled and finely sliced
  • 3-4 sprigs of thyme, leaves only
  • 400ml Carol’s Chicken Stock
  • 1 Tbsp Olive oil

Instructions

  1. Preheat the oven to 180 degrees Celsius/Gas 4
  2. Add your sliced potato to a bowl of water for 10 minutes and drain.
  3. Arrange the slice potato and onion on their side, slightly slanted in a baking dish.
  4. Add the thyme.
  5. Pour over the stock. Drizzle on the olive oil.
  6. Bake in the oven for 45-50 minutes or until crispy on top and cooked through.
