A great Mexican dip. Perfect for fajitas, chilli con carne and tortilla chips.

Ingredients

  • 450g ripe tomatoes
  • 1 small red onion, finely diced
  • 3 cloves garlic, crushed
  • 1 green chilli, seeded and finely chopped
  • Juice of 1 lime
  • 2 tbsp chopped fresh coriander
  • Pinch caster sugar
  • Salt & pepper to season

Instructions

  1. To peel the tomatoes place then in a bowl with boiling water and cover with cling film. Alternatively use tined peeled plum tomatoes.
  2. Leave for 5 minutes. Remove from the bowl and peel the skin off. Cut the tomatoes in half and remove all the seeds. Dice tomato finely. Add the red onion, garlic, chilli, lime juice, coriander and sugar.
  3. Season with salt and pepper. Leave to sit at room temperature for the flavours to amalgamate; at least half an hour is best.
