Tasty Topped Salmon

Healthy and delicious, this is something the whole family will enjoy.

Ingredients

  • 4 salmon portions
  • For the topping:
  • 8 tbsp breadcrumbs
  • 1 onion, finely chopped
  • 4 tbsp dill and parsley, chopped
  • 4 tbsp olive oil
  • salt & pepper
  • To serve:
  • salad or roasted vegetables

Instructions

  1. Season fish with salt and pepper.
  2. Mix ingredients for topping and spoon on to the fish.
  3. Bake in a preheated oven at 200°C/ 400°F/gas mark 6 for 15 minutes or until fish is cooked through and the topping is golden brown.
  4. Serve with salad or oven roasted vegetables.
