Veggie Fried Rice

This is a quick and easy dish that tastes delicious. Perfect to keep in the fridge for up 24 hours.

Ingredients

  • 2 tsp sesame oil
  • 2 bok choi, finely shredded
  • 1 carrot, julienned
  • 1 red pepper, thinly sliced
  • 400g cooked brown rice
  • 2 tbsp dark soy sauce mixed with 1 tsp sugar
  • 80g salted peanuts
  • 6 scallions, thinly sliced on the diagonal

Instructions

  1. Heat the oil in a large wok over a high heat. Add the bok choi, carrot and red pepper, stirring for 1-2 minutes.
  2. Add the rice and cook for a further two minutes, stirring constantly. Add the soy sauce, peanuts and half the scallions, tossing to combine.
  3. To serve, garnish with the extra scallions, with extra soy sauce on the side.
