Chicken Satay

A delicious Thai starter everyone will enjoy.

Ingredients

  • 6 breasts of chicken
  • For the marinade:
  • 2 tbsp soy sauce
  • 1/2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 garlic cloves, crushed
  • 2 tsp brown sugar
  • 1 tsp fresh ginger, grated
  • 1 tsp lime juice
  • For the peanut sauce:
  • 1/2 tin coconut milk
  • 2 shallots, cut finely
  • 1 red chilli, de-seeded and finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp crunchy peanut butter
  • juice of a lime
  • salt and pepper

Instructions

  1. Slice the chicken into thin flat strips and then thread the chicken pieces onto eight skewers and place in a large dish.
  2. Combine the marinade ingredients together. Pour the mixture over the chicken and leave for half an hour or overnight if possible.
  3. Cook the chicken on a griddle pan or under a grill until cooked through.
  4. Meanwhile, make the peanut sauce.
  5. Fry the shallots, chilli and garlic in a pan. Then add the lime juice, soy sauce, brown sugar, peanut butter and coconut milk. Simmer for a minute or two to allow the flavours to combine.
  6. Serve the sauce in a little dipping bowl with the chicken skewers.
