Slice the chicken into thin flat strips and then thread the chicken pieces onto eight skewers and place in a large dish.
Combine the marinade ingredients together. Pour the mixture over the chicken and leave for half an hour or overnight if possible.
Cook the chicken on a griddle pan or under a grill until cooked through.
Meanwhile, make the peanut sauce.
Fry the shallots, chilli and garlic in a pan. Then add the lime juice, soy sauce, brown sugar, peanut butter and coconut milk. Simmer for a minute or two to allow the flavours to combine.
Serve the sauce in a little dipping bowl with the chicken skewers.
