Friday Focus: Improper Butter
Fri Oct 03 2014

Here in Ireland we produce some of the best dairy in the world. We are the producers of THE best butter in the world, with some of the top chefs looking to Ireland for a flavour base for their dishes. Two wily women recognise our talent when it comes to butter-making, and have cornered the speciality butter market with their product, Improper Butter.
Ok. What IS this Improper Butter you speak of?
Improper butter is a range of flavoured butters made from grass-fed Irish creamery butter and the best of Irish ingredients. So far they offer a butter mixed with Cashel Blue cheese, one with garlic, flatleaf parsley and lemon and one with garlic chilli and basil.
What’s the story behind this business?
Funny you should say that. It’s all about friendship over at Improper Butter HQ. Owners Elaine and Hannah met while studying business and commerce at UCD and bonded over their love of delicious grub. Fast forward a few years, and they decided to brainstorm a way they could work together and produce something intrinsically Irish and totally delicious. And so, Improper Butter was born.
So where can I get this delicious butter?
After rave success at some of the country’s most popular farmers markets, the ladies achieved shelf space in SuperValu stores around the country as well as speciality food stores like Avoca and Fallon & Byrne. For a full list of their stockists, check out their website here.
