If you fancy a cup of hot stock, then get your selves to New York, where the bone broth cafés are taking the city by storm. Cashing in on the worldwide trend of following a paleo lifestyle, these cafes are serving up cups of warm bone broth (stock, to you and me). Customers are loving their meaty treats, presumably because on a cold, cold day in New York, nothing warms you up quite like a bowl of soup. Of course, we’ve been doing this for years here in Europe, with so many of our traditional dishes steeped in stock. Sure all you have to do is think back to your granny, nursing a cup of boiling hot Bovril before she went to bed. Same difference, if you ask us. It just goes to show, that when it comes to food trends, everything comes full circle.
