A café in Bristol is rolling out a genius pop-up restaurant called Skipchen, to make people more aware of food waste. This not-for-profit restaurant operates a ‘pay as much as you feel’ scheme, and every dish that is served there is made entirely from food that would have ended up in the bin. Run by The Real Junk Food Project, this is such an important enterprise, and we would love to see something similar popping up on Irish shores.
