
New Chef @ The Morrison

The Morrison Hotel in Dublin has just appointed Sushil Kumar as its new executive head chef. Chef Susil has been putting the Morrison’s iconic Josper Grill through its paces, making the most of its ability to sear and cook at 500° imparting the meat with a unique flavour and texture.
Stand out dishes on the new menu include starters of Caramelised Pork Belly €9, topped with strips of crackling, served with a rich apple sauce and classic Waldorf Salad, named for another iconic Hilton Hotel – The Waldorf in New York. Kilmore Quay Scallops €13.50 are served on a bed of vibrant saffron mash, with chilli butternut squash and crumbled chorizo.
The Josper Sharing Platter €38 is perfect for meat lovers prepared to share! A cast iron skillet is filled with spring lamb cutlets, sage pork fillet and chicken supreme. Served up with a duo of cute cow gravy jugs and stacks of chunky smoked paprika chips. The Josper can also suit more delicate dishes such as with the Josper Blackened Halibut Steak €24, seasoned and blackened on the Josper, the Halibut fillets are complemented with red pepper gnocci sauced with a saffron velouté.
The Josper classics remain at the core of the Morrison’s offering. There’s a choice of Dry Aged 9oz Hereford Fillet €31, 9oz Angus Prime Striploin of Beef €29 and 10oz Rib Eye of Beef, all served with celeriac purée, sweet potato fondant, glazed pearl onions and a choice of sauces: Cognac green pepper sauce, Garlic butter, Béarnaise sauce and Port jus. Or opt for the Morrison Grill Burger €17, a Josper grilled Kettyle 8oz steak burger, topped with Emmental cheese, tomato chutney, house ‘slaw and chunky chips.
A fun new dish on the desserts menu is the Wild Berries Neat & Tidy €7 or €12 to share. It’s the Morrison’s take on the classic Eton Mess, with all the elements, just tidied up on the plate! It includes crispy meringue, honeycomb, Josper chargrilled mallows, cream, popping candy and raspberry sauce. Mix and enjoy!
Dessert Cocktails, €8 each or €15 for two, get the Josper treatment too, with a Josper grilled fruit kebab accompanying the Lemon Tree, a refreshing concotion of Bacardi rum, fresh mint, mango pureé, fresh OJ and Chambord. While a skewer of Josper grilled mallows features next to the Sweet Finish, of Baileys, Frangelico, Crème de cacoa and cream.
The Morrison A La Carte menu is served from 12 midday til late. Afternoon Tea €19 with tea/coffee or €25 with Prosecco is available from 12 to 6pmm daily. There’s a selection of Bar Classics also.
