The weather outside is frightful, and our recipe of the day aims to choose sunshine flavours over cold and wintry ones. This fabulous chicken bake is high on flavour and healthfulness. It has all the goodness of a roast chicken, without any of the effort. Choose whatever hardwearing vegetables you like; roots are always a winner, smear with some woody herbs like rosemary and thyme and bob’s your uncle. Delicious!
