Bacon & Gruyere Baked French Toast

Bacon & Gruyere Baked French Toast

The preparation for this delicious baked French toast breakfast or brunch starts the night before, so it’s a great prepare-ahead dish perfect for a crowd. The bacon is optional, but we definitely recommend adding the Gruyere cheese. It’s just the right amount of sweet and savoury.

Ingredients

  • 1 loaf stale brioche bread, cut into thick slices
  • 6 eggs
  • 250ml milk
  • 250ml cream
  • 60ml maple syrup
  • ½ tsp sea salt flakes
  • 1 tsp cinnamon
  • 200g Gruyere cheese, grated
  • To serve
  • 6 slices cooked streaky bacon (optional)
  • Maple syrup

Instructions

  1. The night before: Butter a large baking dish then arrange the brioche slices in the dish, slightly overlapping. In a large jug or bowl, whisk together eggs, milk, cream, maple syrup and salt. Pour mixture over the brioche slices then sprinkle with cinnamon. Cover and refrigerate overnight.
  2. The day of: Preheat oven to 190°C / 170°C fan assisted / gas 5. Remove dish from the fridge and leave at room temperature while the oven heats up.
  3. Sprinkle with grated Gruyere cheese then loosely cover with tinfoil. Bake covered for 35 minutes then remove the tinfoil and continue baking until golden brown and baked through, about another 10-15 minutes.
  4. Once cooked, remove from oven and break over crispy streaky bacon. Serve.
  5. Also delicious served with strawberries and an extra drizzle of maple syrup or dabs of butter.
