BBQ Sausage Casserole

Kids will love this sticky, sweet casserole, made protein rich thanks to the cannellini beans

Ingredients

  • 1 tbsp olive oil
  • 12 pork sausages
  • 1 red onion, sliced
  • 2 garlic cloves, crushed
  • 1 tin chopped tomatoes
  • 1 tin cannellini beans, drained
  • 80ml BBQ sauce
  • 2 tbsp tomato puree
  • 2 tbsp balsamic vinegar
  • To serve:
  • Crusty bread

Instructions

  1. Heat the olive oil in a frying pan over a medium heat and brown the sausages for 4-5 minutes.
  2. Add the onion and garlic to the frying pan and continue to sauté for 2 minutes.
  3. Stir in the tomatoes, beans, barbeque sauce, tomato puree and balsamic vinegar. Reduce the heat and simmer for 15 minutes.
  4. Serve with crusty bread.
