Introduction

Ingredients
- 300g whole wheat flour
- 400g sugar
- 85g cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp bicarbonate of soda
- 240ml reduced fat milk
- 240ml strong brewed coffee
- 1 tsp vanilla extract
- 120ml olive oil
- 2 eggs
- 360ml heavy cream
- 40g cocoa powder
- 40g powdered sugar
FOR THE MOUSSE FROSTING:
Method
- 1. Preheat the oven to 180ºC/350ºF/gas mark 4. Line two cupcake tins with paper cases.
- 2. In a bowl mix all the wet ingredients. Add the dry ingredients to the bowl and combine with a spatula. Pour the batter into cupcake liners and bake for about 25-35 minutes or until tester comes out clean.
- 3. Remove the cupcakes from pan and let them cool on a wire rack completely.
- 4. While they are cooling, make the mousse topping. In a bowl, beat the cream until whipped and gradually pour in the sugar. Fold in the cocoa powder. Pipe onto the cupcakes in swirls.
