Ingredients

  • 300g whole wheat flour
  • 400g sugar
  • 85g cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp bicarbonate of soda
  • 240ml reduced fat milk
  • 240ml strong brewed coffee
  • 1 tsp vanilla extract
  • 120ml olive oil
  • 2 eggs
  • FOR THE MOUSSE FROSTING:
  • 360ml heavy cream
  • 40g cocoa powder
  • 40g powdered sugar

Method

  • 1. Preheat the oven to 180ºC/350ºF/gas mark 4. Line two cupcake tins with paper cases.
  • 2. In a bowl mix all the wet ingredients. Add the dry ingredients to the bowl and combine with a spatula. Pour the batter into cupcake liners and bake for about 25-35 minutes or until tester comes out clean.
  • 3. Remove the cupcakes from pan and let them cool on a wire rack completely.
  • 4. While they are cooling, make the mousse topping. In a bowl, beat the cream until whipped and gradually pour in the sugar. Fold in the cocoa powder. Pipe onto the cupcakes in swirls.
