Easy Peasy Berry Cheesecake

Ingredients

6 shortbread biscuits
350g cream cheese
200g icing sugar
1 tsp Vanilla Extract
Raspberry coulis
8 Strawberries & Raspberries

Instructions

Crumble the shortbread into a jar.
Sift the icing sugar into the cream cheese and mix well, add vanilla extract
Then on top of the shortbread assemble cream cheese mixture, raspberry coulis and berries.
