Homemade Crunchy Granola

Ingredients

  • 270g oats (alternatively use rolled oats as well)
  • 50g coconut flakes
  • 30g brown sugar
  • 120ml maple syrup
  • 60ml olive oil
  • 60g sunflower seeds, shelled
  • 60g pumpkin seeds, shelled
  • 60g dried cranberries
  • 60g dried cherries

Instructions

  1. Heat your oven to 180°C/350°F/gas mark 4.
  2. On a sheet pan, put your pumpkin and sunflower seeds and roast them in the oven for about 8 minutes or so.
  3. Bring your oven down to 140°C/275°F/gas mark 1.
  4. In a large bowl, mix in the oats, the coconut, the seeds and the brown sugar. In a small bowl, mix your oil and your maple syrup. Drizzle your maple syrup mixture into your dry ingredients and mix thoroughly until all combined. Divide the mixture in two and place it on two cookie sheets lined with parchment paper.
  5. Bake in the oven for 1 hour and make sure to mix the granola around every 15 minutes so it bakes evenly.
  6. When the baking is done, take it out of the oven and mix in your dried fruits.
