Introduction
This vegetable dish is a meal in itself, served with rice and a yoghurt dip, but works really well as an accompaniment to any Indian curry or lentil dish.
Ingredients
- 3 tbsp vegetable oil
- 1 tsp cumin
- 1 tbsp turmeric
- 1 tsp black onion seeds
- 1 head cauliflower, cut into florets
- Salt
- Steamed rice
- Natural yoghurt
TO SERVE:
Method
- 1. Preheat the oven to 220C/425F/gas mark 7.
- 2. In a large bowl, combine the vegetable oil, cumin and turmeric and mustard seeds and toss the cauliflower through, ensuring it is well coated. Season well with salt.
- 3. Place on a baking sheet and roast for 20-25 minutes, until just tender. Serve with rice and yoghurt.
