Lemon & Herb Marinade

This zesty marinade complements chicken or fish beautifully – we use it all year round to add sunshine on a dreary day

Ingredients

  • 2 lemons, halved
  • 60ml olive oil
  • Bunch thyme leaves, picked
  • 2 tbsp basil leaves
  • 2 garlic cloves crushed
  • Black pepper

Instructions

  1. Squeeze the lemons and chop the flesh into slices. Pop the juice and lemon pieces into a screwtop jar.
  2. Follow with the rest of the ingredients and shake vigourously to combine.
  3. How To Use: Marinate chicken, vegetables or fish for up to four hours before cooking.
