Here is a recipe for the perfect homemade mayonnaise.

Ingredients

  • 3 egg yolks
  • 3 tsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 1 clove garlic, grated
  • 300ml good quality olive oil
  • salt and pepper
  • 1 tsp lemon juice

Instructions

  1. Whisk the egg yolks, mustard, vinegar, garlic and a pinch of salt and pepper together in a large bowl. Use a big whisk.
  2. Continuously whisking gradually add the oil. Make sure to add the oil very slowly and steadily. If you add it to quickly the mixture will split.
  3. Add a drop of lemon juice and season to taste with salt and pepper
  4. Cover in a airtight container in the fridge and serve after 30 minutes.
