What better way to warm the fingers and toes of visiting guests than with a hot glass of mulled wine! This spiced Christmas favourite is best made with a fruity wine like Merlot, Cabernet Sauvignon or similar.

Ingredients

  • 60ml water
  • 50g caster sugar
  • Peel from half a lemon
  • Peel and juice from an orange
  • 8 whole cloves
  • 2 whole anise
  • 2 cinnamon sticks
  • 1 bottle red wine

Instructions

  1. Combine all the ingredients except for the wine in a medium saucepan set over medium heat. Stir until sugar is dissolved, then increase heat to medium high and boil until reduced by half.
  2. Lower heat to medium and add the wine. As soon as it starts steaming, reduce heat to low and serve in heatproof glasses with a cinnamon stick and twist of orange peel.
  3. This can be prepared a day ahead of time, simply follow the steps above, but once you add the wine, remove from heat and pour into a sealed container and store in the fridge. About 20 minutes before your guests are due to arrive, pour into a saucepan and heat over medium heat until steaming, then reduce heat to low and leave on the stove to keep warm. Recipe is easily doubled or tripled.
