Introduction
What better way to warm the fingers and toes of visiting guests than with a hot glass of mulled wine! This spiced Christmas favourite is best made with a fruity wine like Merlot, Cabernet Sauvignon or similar.
Ingredients
- 60ml water
- 50g caster sugar
- Peel from half a lemon
- Peel and juice from an orange
- 8 whole cloves
- 2 whole anise
- 2 cinnamon sticks
- 1 bottle red wine
Method
- 1. Combine all the ingredients except for the wine in a medium saucepan set over medium heat. Stir until sugar is dissolved, then increase heat to medium high and boil until reduced by half.
- 2. Lower heat to medium and add the wine. As soon as it starts steaming, reduce heat to low and serve in heatproof glasses with a cinnamon stick and twist of orange peel.
- 3. This can be prepared a day ahead of time, simply follow the steps above, but once you add the wine, remove from heat and pour into a sealed container and store in the fridge. About 20 minutes before your guests are due to arrive, pour into a saucepan and heat over medium heat until steaming, then reduce heat to low and leave on the stove to keep warm. Recipe is easily doubled or tripled.
