Introduction

What better way to warm the fingers and toes of visiting guests than with a hot glass of mulled wine! This spiced Christmas favourite is best made with a fruity wine like Merlot, Cabernet Sauvignon or similar.

Ingredients

  • 60ml water
  • 50g caster sugar
  • Peel from half a lemon
  • Peel and juice from an orange
  • 8 whole cloves
  • 2 whole anise
  • 2 cinnamon sticks
  • 1 bottle red wine

Method

  • 1. Combine all the ingredients except for the wine in a medium saucepan set over medium heat. Stir until sugar is dissolved, then increase heat to medium high and boil until reduced by half.
  • 2. Lower heat to medium and add the wine. As soon as it starts steaming, reduce heat to low and serve in heatproof glasses with a cinnamon stick and twist of orange peel.
  • 3. This can be prepared a day ahead of time, simply follow the steps above, but once you add the wine, remove from heat and pour into a sealed container and store in the fridge. About 20 minutes before your guests are due to arrive, pour into a saucepan and heat over medium heat until steaming, then reduce heat to low and leave on the stove to keep warm. Recipe is easily doubled or tripled.
