Oat & Raisin Cookies

These Oat & Raisin Cookies are gluten and refined sugar free, using only bananas and a little honey or maple syrup for sweetness. They make a great healthier alternative to regular cookies. This is a great recipe to get the kids involved with helping.

Ingredients

  • 2 large bananas (about 325g)
  • 50g raisins
  • 50ml sunflower, light olive oil or melted coconut oil
  • 2 tbsp honey or maple syrup
  • ½ tsp ground cinnamon
  • 200g rolled oats (gluten free if necessary)
  • 50g ground almonds

Instructions

  1. Preheat the oven to 180C (fan 160C), 350F, Gas Mark 4. Line a large baking sheet with parchment paper and set aside.
  2. Peel the banana and mash in a large bowl. Add the raisins, oil, honey and cinnamon, blending them well. Add the oats and almonds and stir until well mixed. The mixture should stick together when squeezed.
  3. Shape into 12 balls and then flatten them into 7cm cookies, arranging them on the baking sheet as you go. Bake for 20-25 minutes until just firm and golden. Remove, arrange on a wire rack and leave to cool completely.
