Introduction

Feather light and so delicious when paired with jam and cream, these are a very special breakfast.

Ingredients

  • 150g self-raising flour
  • ¼ tsp bicarbonate of soda
  • 2 tbsp caster sugar
  • 250ml milk
  • 1 egg
  • TO SERVE:
  • Blueberries
  • Maple Syrup

Method

  • 1. Sift the flour and bicarbonate of soda into a bowl. Stir in the sugar and make a well in the centre.
  • 2. Whisk the milk and egg together in a jug and add to the flour mixture and whisk until a smooth batter forms.
  • 3. Heat a non-stick frying pan over a medium heat. When hot, reduce the heat to medium low. Drop spoonfuls of the batter onto the pan, cooking 3 or 4 pikelets at a time, allowing room for spreading.
  • 4. Cook for 2 minutes a side, or until bubbles form on the surface. Turn and cook for another minute or two, or until golden brown on both sides. Transfer to a large plate and repeat with the remaining batter. Serve warm or cold with blueberries and maple syrup.
