Quick Pickled Red Onion

Our quick pickled red onion is so easy to make! They go great with salads, on a burger or even on some delicious Mexican tacos.

Ingredients

  • 1 red onion, thinly sliced
  • 300ml apple cider vinegar
  • 1/4 tsp black peppercorns
  • 1/4 tsp coriander seeds
  • 1 bay leaf
  • 1/2-1 star anise
  • 1 tsp caster sugar
  • Large pinch of sea salt

Instructions

  1. Place the sliced red onion in a sieve and pour over boiling water until well drained.
  2. In a pan add vinegar, black peppercorns, coriander seeds, bay leaf, star anise, caster sugar and salt. Bring to a slight simmer and once sugar and salt has dissolved remove from the heat.
  3. Using a sterilised jar add the onion and pour over the warm liquid and seal the jar. Allow to cool for an hour and your pickled red onion is good to go. This will keep for up to 6 months.
