Introduction
Here is a recipe to try with the kids they love to decorate them!
Ingredients
- 60g unsalted butter
- 150g caster sugar
- 1 medium eggs (free range) beaten
- 1/2 vanilla pod (cut lengthways and seeds scraped) or 1/2tsp vanilla extract
- 20g cocoa powder
- 30ml red food colouring
- 150g plain flour
- 120ml buttermilk
- 1/2 tsp bicarbonate of soda
- 1 tsp white vinegar
- 50g unsalted butter
- 100ml double cream
- 1/2 vanilla pod (use the remaining pod and cut lengthways and seeds scraped) or 1/2tsp vanilla extract
- 350g icing sugar
FOR FROSTING:
Method
- 1. Heat the oven to 180°C/350°F/gas mark 4. Arrange paper cases in two 12 case cupcake tins.
- 2. Beat the butter and caster sugar together until smooth. Add the egg gradually making sure to mix the mixture well.
- 3. Combine the vanilla, cocoa powder and colouring together to make a smooth paste. Then mix the butter, sugar and egg mixture together with the paste.
- 4. Then add flour, buttermilk, vinegar and bicarbonate of soda and mix well.
- 5. Then spoon the mix into the paper cases. Bake for 20 mins. To ensure the cupcakes are cooked stick a metal skewer into one an if it is clean then take them out if not leave for another 3 mins and remove. Cool on a wire rack.
- 6. While the cupcakes are cooling make a start on the frosting.
- 7. Beat the butter until until soft and smooth. Then begin to beat in the double cream and the vanilla seeds. Sift in icing sugar to the mix to make sure there are no lumps. Then beat mixture until smooth.
- 8. Spoon the frosting into a piping bag and begin to decorate your cupcakes giving each one a healthy swirl on top.
