Roasted Glazed Root Veggies

Roasted veggies are simple to make, but are incredibly delicious. Just the thing when you have a lot of things happening in the kitchen. 

Ingredients

  • 6 large carrots
  • 4 parsnips
  • 1 medium butternut squash
  • 1 head of garlic
  • 125g honey
  • 60ml olive oil
  • Few sprigs of thyme
  • Few sprigs of rosemary
  • Sea salt
  • Freshly ground black pepper

Instructions

  1. Preheat oven 220C/200C fan assisted/gas 7.
  2. Wash vegetables and peel if desired. Cut into large chunks but keeping the veg pieces in roughly the same size.
  3. In a large bowl, toss the vegetables in the honey, olive oil, sea salt and pepper. Arrange on a large roasting tray. Tuck the garlic cloves in between the veggies along with thyme and rosemary.
  4. Bake for 30-40 mins until veggies start to char slightly on top and tender.
  5. Transfer to a serving dish and serve.
