These salmon rice cakes are so delicious you will find yourself making them again and again. The go great with our tasty cucumber dipping sauce.

Ingredients

  • For the chilli paste
  • 2 Thai lime leaves
  • 1 red chilli
  • 1 clove garlic
  • 1 stalk lemongrass
  • ½ tsp salt
  • For the rice cakes:
  • 2 cooked salmon fillets, skin removed & flaked
  • 2 green onions, sliced
  • 3-4 sprigs fresh coriander, roughly chopped
  • 1 egg white
  • 1 microwave pack Tilda fragrant Jasmine rice
  • For the cucumber dipping sauce:
  • 1/8 cucumber, finely sliced
  • 1 green onion, finely sliced
  • ½ red chilli, finely sliced
  • 60ml dark soy sauce
  • Squeeze of lime juice
  • ½ -1 tsp brown sugar (to taste)
