6 scallops (ask you fishmonger to prepare the scallop so it is ready to cook)
Juice of 1/2 lemon
2 cloves garlic, crushed
1 tsp flat leaf parsley
Instructions
Heat olive oil and butter in a frying pan over a medium heat.
Add scallops and fry over for 1 minute on each side make sure not to over cook them. Add the garlic continue to cook for a further 30 seconds on each side.
Squeeze the lemon juice over the scallops in the pan, swirling to mix with the butter.
Arrange the scallops on a plate drizzling the sauce from the pan over them. Then sprinkle with parsley and serve with a wedge of lemon.
