Quick pan-cooked flatbreads flavoured with smokey paprika.

Ingredients
250g strong flour, plus extra for dusting
1 tsp smoked paprika
½ tsp salt
100ml oz warm water
4 tbsp olive oil
Instructions
In a large bowl, mix together flour, paprika and salt. Make a well in the centre and add the water and olive oil. Using a blunt knife, mix the flour with the water and olive oil. Once dough starts coming together, use your hands to form a soft ball of dough.
Tip dough out onto a surface dusted with flour and knead the dough for about 5 minutes until smooth and elastic. Place dough back in the bowl, cover with clingfilm and leave to rest for 15 minutes.
To cook, heat a non stick pan on medium high heat. Cut dough into six equal pieces and roll out each piece on a floured surface to about 3mm thick. Cook flatbreads in dry pan for about 2 minutes, flip flatbread over and cook for about 1 minute until done. Keep flatbreads warm in a clean tea towel while cooking the remaining dough.
