Introduction

Ingredients
- 300g whole wheat flour
- 225g unrefined sugar (if frosting 3/4 cup will be sufficient)
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1 egg
- 1 punnet strawberries, diced
- 60ml olive or canola oil
- 240ml low fat milk
- 2 tsp strawberry extract (try not to leave it out it makes a huge difference although you can still use vanilla extract if you prefer)
- 120g butter
- 225g reduced fat cream cheese
- 300g confectioner's sugar (icing sugar)
- 9 strawberries, halved
FROSTING:
Method
- 1. Preheat oven to 180°C/350°F/gas mark 4. Line a cupcake pan with cupcake liners.
- 2. In a bowl beat egg, oil, milk, strawberry extract, and sugar. Add flour, baking powder and baking soda. Fold in the the strawberries.
- 3. Spoon batter into cupcake liners 3/4 of the way. Bake for 18-22 minutes until golden and tester comes out clean. Remove immediately from the pan after baking and let cool completely on a wire rack.
- 4. For the frosting, mix all of the ingredients ( I normally use a hand mixer when doing this) and frost cupcakes. Use whichever pattern you like!
