Sun-dried Tomato & Spinach Creamy Chicken

Ingredients

  • 4 x chicken breasts
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • Salt & pepper to season
  • Oil to fry
  • 2 x shallots – finely diced
  • 300g sun blush/sun dried tomatoes
  • 350ml chicken stock
  • 2 Tbsp cream cheese
  • Handful of spinach
  • Parmesan

Instructions

  1. Begin by flattening the chicken breasts so they are all even. Season with cayenne pepper, smoked paprika along with salt and pepper.
  2. Add oil to a pan on medium heat. Fry the chicken until golden brown, once cooked remove and transfer to a plate.
  3. Add a little more oil to a pan and reduce the heat slightly. Add shallot and garlic and gently sauté. Next add the tomatoes with a little oil from the tomatoes. Cook for a minute or so.
  4. Add the stock and slightly reduce down, next add the cream cheese and stir until completely melted.
  5. Add the chicken back in along with the spinach. Cook until the chicken is cooked and heated through and the spinach is wilted.
  6. Serve with pasta and lashings of parmesan! Enjoy
