Sweet & Sour Chicken

This quick and easy stir fry is a hit with kids because of its sweet and sticky flavours.

Ingredients

  • 1 tbsp cornflour
  • 60ml soy sauce
  • 1 tin pineapple chunks, drained, juice reserved
  • 60ml white wine vinegar
  • 50g brown sugar
  • 1 tbsp olive oil
  • 4 chicken breasts, cut into bite-sized pieces
  • 1 red pepper, chopped
  • 2 garlic cloves, crushed
  • 1 inch ginger, grated
  • To serve:
  • Basmati rice

Instructions

  1. Combine the cornflour and soy sauce in a bowl. Stir until smooth and add the pineapple juice, vinegar and sugar. Stir until the sugar has dissolved.
  2. Heat the oil in a large frying pan or wok and cook the chicken for 3 minutes on each side, until golden brown. Add the pepper, ginger and garlic and cook for 1 minute. Add the soy sauce mixture to the pan and bring to the boil. Reduce the heat and add the chicken and pineapple pieces. Simmer for 10 minutes until thickened and the chicken is cooked through.
