Teriyaki Salmon with stir fried veg

Quick, easy and healthy, this ticks all the boxes for a family meal in minutes.

Ingredients

  • 4 tbsp teriyaki sauce
  • 2 tsp sweet chilli sauce
  • Zest and juice of 1 lime
  • 4 salmon fillets
  • 1 tbsp vegetable oil
  • 300g pack stir fry vegetables
  • 2 tbsp soy sauce

Instructions

  1. Mix the teriyaki sauce, sweet chilli sauce, lime zest and the juice in a bowl. Add the salmon fillets, coat and leave to marinate for 15 minutes.
  2. Heat the vegetable oil in a large frying pan and add the salmon, reserving the marinade. Fry the salmon for 4 minutes per side, until slightly charred. Set aside.
  3. Pour in the marinade and bubble for a few minutes, allowing it to reduce slightly. In another pan, stir fry the vegetables with a splash of water and the soy sauce for 3-4 minutes.
  4. Divide the vegetables among four plates, top with the salmon and a drizzle of the reduced marinade.
