Yogurt Pot Muffins

These muffins are perfect for kids to make and use their imagination for flavour combinations and decorations.

Ingredients

  • 90g pot of Glenisk Kids No Added Sugar yogurt
  • 3/4 pot sunflower oil
  • 1 egg
  • 1/2 pot of milk
  • 3 pots flour
  • 1 tsp baking powder
  • Dried fruit, chopped fresh fruit, nuts, marshmallows or chocolate chips, desiccated coconut plus extra for decorating

Instructions

  1. Preheat the oven to 180°C/350°F/gas mark 4. Line a muffin tray with paper cases.
  2. Empty the yoghurt into the mixing bowl and keep the pot to measure the rest of the ingredients.
  3. Measure the oil and mix into the yoghurt.
  4. Break the egg into the yoghurt and oil, add the milk and mix well.
  5. Place a sieve over the bowl and measure the flour into the sieve. Sprinkle over the baking powder and sieve into the yoghurt.
  6. Stir in the flour and any fruit or chocolate chips that you are using.
  7. Spoon the mixture into the muffin cases and bake for 20-25 minutes until springy to the touch.
  8. Allow to cool on a wire rack and decorate if desired.
  9. You can use any flavour yogurts and fillings but here are some favourites: vanilla yogurt and fudge pieces, vanilla yogurt and chopped pecan nuts, vanilla yogurt and chocolate buttons, strawberry or raspberry yogurt and white chocolate buttons, strawberry yogurt and coconut, peach yogurt and chocolate chips, peach yogurt and marzipan chunks.
