Once you’ve mastered roasting a chicken, you can add whatever flavours you like to switch it up. A roast bird is a cost effective way to feed a family over two, and sometimes three days. Use leftovers in stir fries or risottos, or to make up a batch of Coronation chicken. The world is your oyster (thigh)!
Traditional Soda Bread
Stirred together in minutes, soda bread can form the basis of scones, rolls and even pizza. It’s a brilliant introduction to breadmaking, and once you feel confident with it you can flavour it with spring onions, or sundried tomatoes – not to mention adding in your favourite nuts and seeds for extra protein.
Italian Tomato Sauce
You will never use a jar again once you make your own tomato sauce. It forms the basis of pasta dishes, pizzas, toppings for bruscettas – even mixed with rice will work.
Spaghetti Bolognese
A traditional ragu recipe will form the basis of so many meals. Use for lasagnes, mix with gnocchi and top with mozzarella – add some beef stock and thyme and simmer for a further twenty minutes and you’ve got a decent basis for cottage pie. This is simple, delicious cooking.
