Keelings Lunchbox Fillers

It’s that time of year again, the fun and games of summer is over and the kids are heading back to school. These lunch box fillers will ensure that they’ll keep attentive, energetic and down-right scholarly!

1. Berry sandwich

The go-to lunchbox item is the humble sandwich, but ham & cheese is so very boring! Why not spruce things up with Keelings berries?

Ingredients:

  • Small handful of Keelings berries – your choice (they’re all good).
  • 1 teaspoon of honey.
  • 1 tablespoon of cream cheese.
  • 2 slices of whole-wheat bread.

Method:

  1. Place one slice of bread on a chopping board – place the cream cheese in the middle and drizzle honey over the cheese. Spread to the honey cheese to the edges of the bread. Spread to the honey cheese to the edges of the bread.
  2. Place your Keelings berries evenly over the mixture and secure with the second slice of bread.
  3. Crimp the bread crust all the way around the edges to secure the filling inside and you’re ready to do. Just try not to eat it before lunch-time!

2. Blackberry Cereal bars

Why not try these Keelings blackberry cereal bars for a lunchbox treat, rather than reverting to chocolate or biscuits? The kids will love them just as much and so will you!

Ingredients:

  • 500g Keelings blackberries.
  • 2 tablespoons honey.
  • 2 tablespoons water.
  • 1 tablespoon lemon juice.
  • 1/2 teaspoon ground cinnamon.
  • 60g all-purpose flour.
  • 200g quick cooking rolled oats.
  • 50g packed brown sugar.
  • 1/4 teaspoon ground cinnamon.
  • 1/8 teaspoon baking soda.
  • 80g butter, melted.

 

Method:

  1. In a medium saucepan combine Keelings blackberries, honey, water, juice and cinnamon.
  2. Bring to a boil then reduce heat and simmer uncovered for 8 minutes. Stir frequently then remove from heat.
  3. In mixing bowl stir together flour, oats, brown sugar, cinnamon and soda.
  4. Stir in melted butter until thoroughly combined.
  5. Set aside 1 cup of the oat mixture for topping.
  6. Press remaining oat mixture into an ungreased square baking pan.
  7. Bake at 200 C for 25 minutes.
  8. Carefully spread filling on top of baked crust. Sprinkle with reserved oat mixture. Lightly press oat mixture into filling.
  9. Bake at 200 C for 25 minutes.
  10. Cool in pan on a wire rack then cut into bars.
  11. Number of Servings: 20

 

3. Chia Seed Strawberry pods

If your little-ones like a post lunch dessert, these chia seed strawberry pods could be their new favourite treat!

Ingredients:

  • 180g Keelings strawberries.
  • 300ml of almond milk.
  • ½ teaspoon vanilla extract.
  • 25g chia seeds.
  • 4 teaspoons of honey.

Method:

  1. Place the strawberries into a food processor and pulse until pureed.
  2. Add in the vanilla extract, almond milk and honey – blend together.
  3. Pour mixture into a bowl and stir in the chia seeds.
  4. Pour the mixture into single-serving jars and leave in the fridge over-night.

 

4.Snack Pots

Of course, there are those days where we are in too much of a rush to prepare anything, so that’s when Keelings snack-pots come into play. A more perfect lunchbox filler you’re unlikely to find.
