Old Street's Mandarin, Ginger & Whiskey Sour

We are so delighted to have teamed up with Old Street to bring you some really delicious festive cocktails, perfect for making at home.

Old Street is a modern neighbourhood restaurant situated in the heart of historic Malahide, County Dublin.

Mark and Adriana Fitzpatrick restored two of the oldest buildings in Malahide village to offer a comfortable and casual dining experience along with a contemporary cocktail bar and award winning wine list.

Ivan Kordic has been developing and designing cocktails for Old Street from the moment he arrived, and has become a bit of a celebrity from behind the bar. His energy, enthusiasm, and passion for crafting seasonal, fun, and delicious cocktails is fuelled by his experimental nature and eagerness to give anything a try. Ivan uses traditional tools of the trade as well as modern technologies like Sous-Vide and an an Ultrasonic Homogeniser to get as much flavour as possible into his homemade ingredients and garnishes.

Get the recipe for Ivan’s Mandarin, Ginger & Whiskey Sour:

  • 500g water
  • 500g caster sugar
  • 100g ginger
  • 3 mandarins
  • .60cl whisky
  • .20cl lemon juice
  • .20cl ginger mandarin syrup

For syrup:

Add the water to a saucepan and bring it to a simmer. Add the sugar and keep stirring until dissolved. Add the ginger and the roughly chopped mandarins. Leave to simmer for 10 mins.

Leave to cool slightly and then add to your blender and blitz until smooth. If you do not have a blender you can use a stick blender. Be careful with the temperature of the mixture, ensure it is cool.

Then pass the syrup through a sieve.

For decoration:

USe some of the syrup and pour into a jar and add segments of 1 mandarin. Leave in the fridge overnight or for a couple of hours to infuse.

Cocktail Assembly:

Add 60cl whiskey, 20cl of mandarin syrup and 20cl lemon juice to a cocktail shaker. Add handful of ice and shake!

Strain into your glasses and pack with ice.

To garnish:

Use toothpicks and weave 3 of the mandarin segments and place on top!
