We don’t know about you, but pretty much every time we make rice for our families, we end up with a huge amount left over. The great thing about this, is that leftover rice is a brilliant basis for loads of delicious dishes. Don’t believe us?
Try one of these yummy recipes for leftover rice so that the tub in your fridge right now doesn’t go waste!
Traditionally made with leftover risotto, less authentic arancini can be made with long grain or basmati rice. Follow the recipe above, adding 75g extra cheese to the rice mix, which will make it more glutenous and malleable.
There is little more delicious than a salty, spicy fried rice, and this chicken version is no different. Substitute for whatever protein you fancy (pork or prawns work well) and add in veggies that are almost past their sell by date in your fridge.
Stuffed peppers are a fantastic vehicle for leftover rice. Follow the recipe above, using rice instead of couscous. The results will be delicious, and tastes wonderful hot or at room temperature.
