There are a few places left on this weekend’s All Things Pig course at the All Things Good Cafe and Cookery School in Durrus Co Cork. This three day course will cover a lot of the classic charcuterie dishes from Jane Grigson and Elizabeth David taking in some great English, French and Italian dishes. They will be butchering one pig the spanish style and creating many of there amazing dishes, sausages, puddings, confit and the best of all seeing and learning how they do not waste anything, everything gets used and everyone gets to go home with pots of the best pork stock along with lots of other goodies to have in your freezer. This year they also have Fingal Fergson rock up to be our butcher and he will bring along his pit smoker and spit and cook for the class. This is not to be missed.
