A North African spice mix that translates literally as “top of the shop”.

Ingredients

  • 1 tsp freshly ground cumin
  • 1 tsp freshly ground ginger
  • 1 tsp turmeric
  • 1 tsp salt
  • 3/4 tsp ground cinnamon
  • 3/4 tsp freshly ground black pepper

Method

  • 1. In a small bowl whisk together all ingredients until combined well. Spice blend keeps in an airtight container at cool room temperature for 1 month.
