


5 Spice Chicken

Easy
Introduction
This heady, spiced chicken is marinated in Chinese 5 spice and then roasted in the oven with vegetables for a super tasty, quick midweek meal.
Ingredients
- 500g chicken thigh fillets, skin left
- 1 heaped tsp of Chinese 5 spice
- 2 cloves garlic, crushed
- 1 inch ginger, grated
- 1 red pepper, sliced
- 1 onion, sliced
- 2 tbsp vegetable oil
- Lime wedges
- Egg noodles, tossed in sesame oil
TO SERVE:
Method
- 1. Place the chicken fillets in an ovenproof dish and toss in the Chinese 5 Spice, garlic, ginger, onion, and vegetable oil. Toss well to make sure that all the ingredients are well coated with the spice mixture. Cover with cling film and marinate in the fridge for 2 hours or overnight.
- 2. Preheat the oven to 180C/350F/gas mark 4. Arrange the chicken skin side up and roast for 35-40 minutes, until the chicken skin is burnished and the flesh cooked through. Serve with egg noodles, tossed through with sesame oil and lime wedges.
